I am trying to change our diet to be primary plant based, I already don't eat meat- the husband does but mostly only when we eat out since I don't buy it and I do almost all the grocery shopping, I am trying to reduce dairy- drink coconut or almond milk, although I am not giving up all dairy since I am a huge fan of cheese, reduce the amount of white flour products we use. For the past couple of weeks I have being going to Aldi's which has produce for super cheap and I stock up and I have been cooking a ton of vegetables. I am going to check out Traders Joe's and the asian grocery store to try to get some healthier/unique stuff to try cooking with. I changed to only using real butter seveal months or longer ago because I heard the lower fat fake butters/margarine are full of chemicals. I also will be looking for coconut oil to cook with which has been shown to be awesome for you. I am trying to dramatically reduce our processed food intake. However, I will not be completely cutting anything out or making it off limits because I feel if I do that it will cause me to never stick with it.
I am trying to focus on a lot of anti-cancer foods. In the past couple of months I have been also focusing on adding garlic to a lot of my cooking due to its health benefits.
I made up this recipe today which came out great:
1. green cabbage
2. onions
3. bella mushrooms
4. mango
5. pears
6. sweet potato
dice and saute and cook in butter for about 1/2 hour
add diced canned tomatoes, cream, about a tablespoon or two of sugar and a little salt and cook for another 5-10 minutes.
Next time I am going try replacing the cream with something a little healthier and hopefully vegan. But overall I thought this tasted awesome and was a ton of veggies and fruits and no carbs.
